Oatmeal and Bananas with a Twist

Oatmeal Banana Pecan Bites

I wanted to make something to satisfy my dessert cravings without putting a lot of sugar in my diet. I came up with these banana bites that have oatmeal, dates, pecans, and of course…you guessed it, bananas. I thought these were pretty good, so I figured I’d share them with you! They are easy to store and are great on the go. Enjoy.

Ingredients:
2 cups old fashioned oats
16 pitted dates (can use less if desired)
1 tsp cinnamon
2 bananas
1/4 cup coconut flour
2 tbsp flax seed meal
1/3 cup pecans
1 tbsp vanilla extract
2/3  cup unsweetened almond milk
1/4 cup oil
1 tbsp unsweetened hemp protein powder

Directions:

  1. Set aside: 1 banana, 8 dates, 1/3 cup almond milk to make puree
  2. Blend on high
  3. Combine all other ingredients in a food processor. Pulse until evenly mixed.
  4. Add puree to food processor. Pulse until evenly blended.
  5. Roll mixture into balls
  6. Bake at 375 for 10-12 minutes
