
Roasted Purple Cauliflower with Fresh Lemon Juice
If you’re anything like me, you do not want the whole backstory on how I was inspired to come up with this recipe or my trip to the grocery store to find purple cauliflower, so I’m going to give you what you came for and we’re going to get right on into it. Leggo!
Ingredients:
1 head of purple cauliflower
2 tablespoons of Smart Balance spread
1/4 teaspoon thyme
1/4 teaspoon sea salt
1 teaspoon fresh chopped garlic
1 teaspoon fresh parsley
1/2 fresh squeezed lemon
Directions:
- Slice cauliflower from top to bottom to make steaks
- Place cauliflower on a flat baking sheet
- Combine thyme, sea salt, lemon juice, and garlic into a bowl
- Brush mixture on bottom of baking sheet and top of cauliflower
- Bake on each side for 10 minutes on 375
